
Processing tomatoes can be time consuming so I am all about shortcuts and tricks to reduce the amount of time spent in a hot kitchen! This oven-roasted tomato sauce is one of the easiest recipes I've found to use some of that summer bounty!
The EASIEST sauce recipe!
Roasting your tomatoes gives them them a slightly smoky flavor and is so much less-fuss than cooking them down over the stove.
Oven-Roasted Tomato Sauce
Ingredients:
Um.. tomatoes. Just tomatoes.
Personally, I just keep mine simple so that I can use the sauce for anything later on. A quick marinara, chili, soups and stews, pasta..
This sauce is fully-customizable, you can add anything into it that you would like when you're roasting your tomatoes. Here are a few of my favorites
garlic
sweet onions
carrots
peppers

Directions
Preheat your oven to 350°F
Wash and loosely quarter the tomatoes. Don't bother removing the cores, seeds or skins
Place tomatoes in oven-safe baking dishes and bake for 2-4 hours or until the tomatoes are cooked soft and the tops are beginning to brown
Allow to cool
Puree smooth in a blender or food processor
At this point your sauce is done or you can run it through a food mill for an extra smooth finish
Freeze or can your sauce following you canners instructions
*to freeze: pour your sauce into quart-sized freezer bags and lay them flat. That way you can easily stack them in your freezer and they won't take up much space!
