Here at Lone Pine Farmstead we grow lots of berries and are always looking up new ways to use them up. This easy recipe is a BIG hit with the kids and adults alike! It's perfect for breakfast but also would be delicious with a big scoop of ice-cream.
Baked Strawberry Pancake
Ingredients
1 cup flour
1 tablespoon granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon coarse salt
1/2 cup sour cream
1/4 cup whole milk
1 teaspoon pure vanilla extract
1 large egg
2 tablespoons melted butter + 1 tablespoon for the pan
1 cup diced strawberries
Directions
Preheat to 375°F and melt 1 tablespoon butter in a cast-iron skillet.
Whisk together flour, granulated sugar, baking powder and salt in a bowl.
Whisk together sour cream, milk, vanilla, egg and melted butter in another bowl.
Whisk milk mixture into flour mixture until just combined.
Pour batter into the skillet and sprinkle the diced strawberries on top.
Bake 25 minutes until golden brown
